"I always begin by inhaling the cork," explains Per M. Pedersen, Owner and Founder of Wine Mage. "Even ten bottles from the same estate and vintage tell different stories. Place ten identical bottles in a cellar, and if just one draws in a fraction more air through its cork, each will unfold in its own way. Wines differ too depending on whether they come from the first press or the final press. So many subtle elements shape their journey – and it is precisely this that makes wine endlessly enchanting."
The perfect temperature
Wine is a living art, and how it is stored shapes its journey. For bottles destined to age gracefully over many years, the ideal sanctuary is a steady 12–14°C.
Many of my clients choose 14–17°C, a range that also offers red wines at their most elegant serving temperature. Here, the alcohol recedes, allowing the fruit and subtle aromas to take centre stage.
Time itself is guided by temperature: too warm, and the wine matures too quickly, its tannins and structure evolving differently from what the winemaker intended. A bottle stored atop kitchen cabinets at 22–24°C may survive two or three years, but rarely the decade or more that patience and proper conditions can bring.

Shield your wine from sunlight
Wine is a delicate treasure, and even the gentlest sunlight can alter its journey. Direct rays are among the greatest threats to a bottle’s integrity, slowly changing its character and diminishing its potential.
For wine rooms bathed in natural light, consider protective window films or other subtle shading. In safeguarding your collection, you preserve not just the wine, but the promise of the extraordinary tasting experiences that await.
The right humidity
For wines destined to age gracefully over many years, humidity is an important consideration. Each bottle naturally maintains a high level of internal moisture, so unless the wine is stored in an unusually dry environment, the risk of corks drying out is minimal.
With a high-quality cork, recent research shows that it makes little difference whether a bottle rests upright, tilted, or lying down.
And when it comes to closures, the use of cork is steeped in centuries of tradition. Some of the world’s most prestigious champagnes spend decades maturing under a seal resembling a simple bottle cap. Choosing cork or screwcap is often a matter of personal preference rather than an indicator of quality.
From the winemaker’s perspective, the matter is more nuanced. The choice of closure reflects the message a house wishes to convey, but the quality of the cork also influences the wine’s long-term evolution. The higher the standard of the cork, the less variation there will be among bottles, ensuring a consistently exceptional tasting experience.
